Located in the northern part of Burgundy, the Chablisien’s vineyard covers 5.400 hectares among which 4.000 are planted in “chardonnay”. You can find it in about twenty villages near Chablis.

In the Yonne Valley, two villages, Irancy and St Bris le Vineux, produce very nice white wines with sauvignon (an unusual variety of vine). Varieties of vine essentially used for white wines are the chardonnay, a "variety productive of fine wines and solid wines", and, for red wines, the pinot noir and the gamay.
