Where to store the wines ?
A good cellar must be:
• Neither too hot nor too cold: wine dislikes sudden changes in temperature. Warmth is irreversible. The wine is irreparably changed. The cold tends to stabilise the wines. The perfect temperature is around 12°C. However, it is better to err on the cold side rather than the hot.
• Protected from the natural light which tends to damage the tannins. That causes chemical reactions that prematurely age the wine and tends to adulterate its taste
• Humid but not too much to avoid yeast. The humidity level should be constant, between 70 and 80%, so that the corks don't dry. Gravel your cellar to water it when it is too dry and to absorb a little humidity when it is too humid.
• Odorless and without vibrations: vibrations speed up the ageing too quickly. Strong odours (oil or paint) can reach the wine through the cork. There is a constant exchange between the air and the wine
In the apartments, air-conditioned stores can replace a cellar for about 20 bottles.
How to store the bottles ?
Bottles of wine must be laid down to avoid the cork becoming dry. Bottles of spirit should stand so that alcohol doesn't damage the cork.
When to drink the wine ?
The time of storage is completely different from one wine to another. In general, dry white wines don't age as well as red wines, for which tannins help to age. The time of storing of a great red wine is about thirty years. The other may be stored for five to ten years. It can be interesting to buy cases of 12 bottles and to open a bottle each year to control its evolution.
